4 zucchini squash | |
1 egg | |
2 cups of tomato sauce | |
1 cup of shredded mozzarella cheese | |
½ cup of cottage cheese | |
½ cup of parmesan | |
a couple of basil leaves | |
1 spoon of olive oil | |
pepper, Himalayan salt to taste |
Directions

Heat the oven to 200°C.

Peel the zuchinnis, cut them lengthwise into strips about 3 mm thick.

Lay the zucchini strips in a single layer on a clean kitchen towel and let them dry briefly while you prepare the cheese filling.

Mix the cottage cheese, Parmesan cheese, half a cup of mozzarella cheese, egg, salt and pepper in a bowl.

Coat the bottom of the pan with olive oil and then add the tomato sauce. Place about a tablespoon of the cheese mixture in the center of the zucchini strip, roll up and place seam side down in the sauce in the pan.

Pour over the remaining mozzarella cheese, cover the pan with aluminum foil and bake for 20 minutes. Then uncover and bake for another 10 minutes, or until the cheese is melted and the sauce is bubbly. Garnish with fresh basil, grated Parmesan and serve warm.
