1 cup of raw cashews
1 lemon, juice and grated zest
1 cup of powdered coconut
½ cups of dates, cleaned

Directions

Place the cashews, lemon juice, lemon zest, dates, coconut powder in a blender and blend until the mixture is thick and moist, adding a little water if necessary.

Form bite-sized balls with your hands, then roll in some shredded coconut.
